On our way back from River Cottage, we called in to the excellent Stoate’s Mill near Shaftesbury to buy some of their organic bread flour.
We’re coming up to a bread making marathon for the church harvest festival, so as well as rye flour we bought strong white and granary flour (Maltstar is the Stoate’s name for it).
And here is the first loaf made with our new ingredients – a simple yeasted 60% granary/40% white mixture. Light and delicious. Sourdoughs will be produced in the near future.
If anyone fancies trying these fabulous flours, which were introduced to us by the very skilful Aidan Chapman, you can buy them either directly or from BakeryBits.
